This evening, we dine at Saffire Freycinet's Palate restaurant, an establishment that has garnered respect from gastronomes the world over. Serving a distillation of the freshest, purest ingredients available locally, the menu changes daily - the chef even welcomes your suggestions and input.
Our discovery of Tasmania's varied riches continues. The carefully curated range of Your World experiences presented on Day 1 are all available again today. For dinner, we are treated to a second evening at Palate restaurant.
We fly directly to Kangaroo Island, avoiding a time-consuming transfer and maximising our discovery time. Kangaroo Island is often referred to as Australia's Galapagos, so numerous are its animal species. For the next two nights the Southern Ocean Lodge, perched high on a clifftop, is at the exclusive use of our group. Overlooking the waves, this property embodies eco-chic while showing off Hanson Bay. Its contemporary design features walls made of recycled spotted gum, and local artisans have added their touch with pieces inspired by the landscape.
A leisurely lunch is followed by a brisk coastal cliff walk and a naturalist presentation. We take a short drive to Grassdale, an early settlement now returned to native kangaroos and wallabies. We'll enjoy aperitifs and canapés at sundown as the animals bound by. A sumptuous dinner of South Australian produce awaits us back at the lodge.
After a sleep soothed by crashing waves, it's time to learn more of the island's diverse history, wildlife and landscapes. Explore Cape du Couedic, visited by the French in 1803 and named for the French naval officer of that expedition. We'll also discover the Remarkable Rocks, giant boulders sculpted by 500 million years of rain, wind and waves. Another testament to nature's power, Admiral's Arch serves as a viewing platform, from which to observe the local fur seal colony frolicking below.
After lunch back in the sophisticated confines of our lodge, the wine lovers among us will be in heaven with a wine tasting session in the intimate Southern Ocean Lodge cellar with a renowned island vintner. Kangaroo Island boasts near perfect grape-growing conditions with a cool, semi-dry climate that allows slow ripening and, as a result, exceptional quality wine.
A unique privilege rounds out our day, as we get up close to one of Australia's largest colonies of Australian sea lions during a walk around Seal Bay with a knowledgeable naturalist guide. The journey around the island continues at dinner tonight, but this time it's of the gastronomic variety.
We begin delving into 50,000 years of human history. Our flight arrives in the Red Centre late in the afternoon, and we are whisked to Longitude 131°. The evening sky provides a striking backdrop as we gaze in wonder while the shifting sun turns the rock from ochre-brown to orange and then dark red.
For dinner we feast on a fusion of modern and indigenous flavours at Table 131°. Retiring to your tented pavilion, you may choose to sleep on an outdoor bed on your deck, under the Outback stars and with a warm fire glowing beside you. The next day you'll wake with a majestic sunrise view of Uluru at your feet.

Those that return to Longitude 131° for lunch can then either relax at the lodge for the afternoon, or head west to discover Kata Tjuta, large domed rocks that are every bit as sacred to the Anangu people as Uluru.
This evening brings the chance to witness artist Bruce Munro's internationally acclaimed solar installation Field of Light. Made up of 50,000 bud-like stems crowned with frosted-glass spheres, these glowing blooms appear to sway under the night sky. We'll meander through the field to experience the interactive work before once again enjoying the cool night skies at Table 131°.
This morning, we take one last look toward Uluru then turn our gaze to Spicers Hidden Vale, set in a stunning wilderness region just an hour's drive from Brisbane. This country retreat is set in a historic homestead surrounded by heritage cottages - our residences for two nights.
At Homage, Spicers Hidden Vale's highly awarded restaurant, head chef Ash Martin and his team design menus inspired by the local produce farmed right on the property, which they collect daily. Our first experience of this true farm-to-table experience is over lunch, after which we're grateful for the freedom to stroll the idyllic countryside at leisure, or just gaze out over the towering gums from your personal veranda.
From freshwater crayfish and beef to seasonal produce, a number of different dishes are once again available on the ever-changing a la carte menu this evening.
